The Crabby Blogger

Hey there...
Yup, that would be me today.
You ever have those days that you aren't fit for human interaction?
TOTALLY me today.
I have done my best to avoid rubbing off on anyone! Ha!
I got my sons final report card today, too...
He is pretty darn lucky that I like him or else I would be shipping him off to some military academy that won't return him to me until he is 25. Grrr!!!
I kid, I kid...
Ok, sort of.
I do like the boy, but his grades stink on ice.

Ok, enough of that.
I was completely MIA from here yesterday because I spent the day getting my other site going. Oh man, I see why computer people make so much money. Gah! So, so, so time consuming!
I am loving it so far!


It is more of a recipe sharing site and all about my adventures in allergy-friendly clean eating.
I am pretty excited about it!

You can check it out. Not much there yet and there are some bugs, but bookmark it!
I anticipate taking the recipes off of this site and transitioning those to 'A Little Moore From My Kitchen'.

Let's see...oh, it was a cross training day and of course I had to get my runstreak run in.
I'm not going to lie, I was cursing that streak today and considered scrubbing it all together or just walking.
I didn't do either.
 I did my mile.
I took an amazing picture of my arm pit (so glad it looks shaved!)
And managed to get one of my face.
For the record, my hair looked like this before my HIIT and run.
HIIT & Run?
Hahaha!
I just cracked myself up.
Oh man, you should be glad I suck at actually posting something every day!
Oh, and because you haven't seen one in a while...
Me, No Make up and a muffin!

I'm Marvelous In My Monday, Are you?


Good Morning!

I am feeling great this morning, I hope you are, as well.
I feel like I have gotten so much done. Woohoo! Love that!
 I think today definitely requires a Marvelous in my Monday post.

Believe it or not, I am not all that chatty this morning, so I am going to share this collage with you.


 This has been my morning, so far!
Monday mornings are scheduled strength & stretch days.
The run streak added a bit to the day.
Weight lifting was just a nice 30 minutes, and I did a full upper body workout.
You know I like to get it all in!
I followed that with a slow 10 minute mile.
I have a sore hamstring and I don't want to push it right now. Definitely not worth it.
So I went naked - no music, just me and my thoughts.
Even if it was only 10 minutes, I find it relaxing.
I came in and finished off the morning with 20 minutes of yoga.
I really want to get my full runner's yoga session in tonight.
I am going to see about making that happen.
A nice shower, a lemon crumb muffin, some swiss chocolate decaf and the morning paper.

That, my friends is why I am Marvelous in my Monday!
I have lots to do today.
So I will leave you to enjoy the rest of your morning.

Sunday Run Day & Zucchini Crust Pizza!

Oops, I was about to say good morning. I'm a little late for that. Just a little!
I hope you are having a wonderful Father's Day Sunday. I am.
Sunday is my long run day and even though my stomach awesomeness tried to put up a fight, I got a wonderful 4.5 miles in this AM.

I was pretty happy with the run. I turned off the prompt that tells me my pace per mile. I really didn't want to know. I also chose roads that I have not run before and there were some good hills. I don't want to be intimidated by hills with the Brooksie Way coming up!
The temp was great, but that darn humidity was up around 90%.
That makes for such a hot & sweaty run.
My pony tail was too low and my hair kept getting in my arm pits from the back - Lovely!
My headphones didn't want to stay put either. It was just one of those days.
Oh, and I am adding this to the Runners version of Murphy's Law:

When you are geographically the furthest from home, that is when you will need to use the bathroom.
(And also when you will consider squatting in someone's bushes!)

For the record, I didn't squat in any bushes. I consider it a dual workout for all the extra muscles it took to ignore the whole bathroom thing.

This is post run and I hurried to take the picture before the beet red face took over. I was still looking crazy even after my shower!

It is day 21 of the Runner's World Run Streak and according to Daily Mile, I have run 42 miles since the start. Woohoo!
I think there are about 18 days left.
I will definitely put in more miles than I did in the winter.
If I remember correctly, I ran just short of 50 miles.
Yay me!
Running on dry roads is definitely much easier than snow & ice!

It's hard to believe that I have been running for a year.
I never thought I would EVER run, let alone stick with it.
It helps that I have so many amazing people around me that do the same and have a love for it, as well.
Without my BF, Nicholas, I would never have gotten this far. His crazy butt is out there running 10 hour races and 50k's. Even though I have no desire to go the number of miles he does, I always think about him when my body wants to stop after just a few miles. He is, undoubtedly, my inspiration and support system. He is an amazing man, and an amazing runner. I feel so lucky to be loved by him.
I adore this man in a way that I can't even put words to.
{sigh}
Haha...my sappy moment for the day! (Maybe for the month - Haha!)

Ah! I almost forgot AGAIN!
I didn't realize that I had never posted the recipe for my Zucchini Crust Pizza.
Geez...I am such a loser blogger!
Here you go!

Zucchini Crust Pizza
1# of Zucchini (yields approx. 7 cups grated)
3/4 cup 100% Liquid egg whites
1/3 cup Gluten Free flour of choice
1 Tbs. Minced Garlic

Additional spices/seasoning, as desired
Combine ingredients, season to taste.
Line a 9x13 pan with parchment paper.
Pour zucchini mixture onto paper and smooth evenly with a spatula.
Bake at 450'F for 20-30 minutes, or until it begins to brown.
Turn oven down to 350F. 

Place a cookie sheet over the baked crust. Carefully, flip the pans together so that the pizza crust is now laying on the cookie sheet. Peel off the parchment paper and bake (bottom side up) for 15-20 minutes.
You can actually skip that step, but it is going to give you a crispier crust.
Then you will want to turn the crust back over so it's back on it's little pizza crust booty.
Top your crust, as desired.
Bake for 20-30 additional minutes, or until browned to your liking. (Mine baked closer to 40 minutes.) 

I also like to broil it for the last few minutes to get the cheese bubbling.

A few tips for you: 
I had a million things going the other day and grated the zucchini into a colander and let it sit out.
The crust ended up being my best ever. The zucchini was probably on the counter for a couple of hours. I flipped the shreds around every now and then. I am not sure if this drying time really made a difference, but the crust was fantastic!
I also added about a tablespoon of pumpkin seed powder and a tablespoon of flax meal to the last batch and like I said, it was the best yet!
I have found that warming up the leftovers in the oven on a pizza stone makes it crispy and SO good!

So, you may want to play around with it. It is super simple and it's not like you can mess it up!
If all else fails, you can eat it in a dish like casserole, right?
