A Healthy Chocolate Raspberry Muffin? Seriously?!?

Chocolate Raspberry Muffin
No one told my muffin that it was supposed to be a bit more photogenic. But it tastes so good!
Nice and chocolatey with a light raspberry flavor.

Here's the recipe:

Chocolate Raspberry Muffin
4 tsp. Powdered Egg White
1/2 cup Unsweetened Flax Milk, divided
1 Tbs. Pumpkin Puree
2 Tbs. Bob's Red Mill Coconut Flour, divided
2 Tbs. Bob's Red Mill Low-Carb Baking Mix, divided
1 Tbs. Hershey's Special Dark Cocoa Powder, divided
2 tsp. Vanilla extract, divided
1.5 tsp. Watkins Raspberry Extract, divided
1.5 tsp. Watkins Chocolate Extract, divided
3/4 tsp. NuNaturals Prebiotic Blend Stevia, divided
2 droppers full of NuNaturals Chocolate Stevia liquid
1/2 + 1/8 tsp. Baking Powder, divided
1/8 tsp. baking soda
Pinch of salt

 Preheat oven to 350 degrees. 
Prepare individual muffin tin or baking dish by spraying lightly with nonstick baking spray.

Muffin Batter
Whisk 4 tsp of Egg whites with 1/4 cup of flax milk
Add:
1 Tbs. pumpkin puree
2 tsp. Cocoa Powder
1 tsp each, Vanilla, Raspberry and Chocolate extracts
1 dropper of Chocolate Stevia liquid
1/2 tsp. Stevia powder
Whisk to combine, making sure that the cocoa powder is mixed in.
Stir in:
1.5 Tbs. Coconut flour
1.5 Tbs. Baking Mix
1/2 tsp. Baking Powder
1/8 tsp. Baking Soda
Add any remaining liquid (minus the Tbs you used for the crumb topping)
You may need to add additional liquid, as the coconut flour is quite absorbent.
The batter should be a nice consistency. Somewhere between cake batter and brownie batter.
Pour into prepared baking tin.

Crumb Topping
1/2 Tbs. Coconut Flour
1/2 Tbs. Baking Mix
1 tsp. Cocoa
1 tsp. Vanilla
1/2 tsp each, Raspberry & Chocolate Extracts
1 Dropper full of chocolate stevia liquid
1/4 tsp. Stevia
1/8 tsp. Baking Powder
Pinch of Salt
1 Tbs. Flax Milk
Combine all of the ingredients to form crumbs. 
You may need to add a drop or two more of milk, or you can use vanilla, as well. 
Drop crumbs over batter.

Bake at 350 degrees for 30-35 minutes.

Hints: I usually have two mixing bowls and measure out the ingredients for both at the same time. I like my crumb topping to be a bit soft and drop it off the tip of a spoon in about 1/2 tsp sized drops. The crumbs are my favorite part!

My training is going well even though the Michigan winter is doing everything it can to keep my runs from happening. Tomorrow it is supposed to rain and be 60 degrees.
Yesterdays 'heat wave' Ha! was 23 degrees.
Friday it is supposed to be 19 and snow.
Please, you don't have to be jealous.
The housing market is wide open...All kinds of places to live here!
Ha!

Today was supposed to be a strength and stretch kind of day.
Meh...I did an hour of butt kicking cross training that combined boxing, straight up cardio and strength training. Most of it was legs. We will see how my legs feel about it tomorrow.
Yesterday was a 4 mile run, tomorrow it is 3.
Hmm...we'll see. Should be fine.

My friends, I am starving and the laundry probably isn't doing itself.

    1. Girl, I am so over this weather! Snow storm Friday, more snow over the weekend, freezing rain on Sunday, rain all the Monday and yesterday. The snow is completely gone, it is 50 out right now and tonight it is supposed to be 18 and snow...
      SOOOO ridiculous! :(

    1. My Mom took cake decorating lessons when she was pregnant for me and I have been baking and decorating forever. My BIL is a chef and he can't bake...lol!
      He said there is too much science involved. :)
      My muffin addiction is out of control, for sure!
