Adjusting to Training and a Bonus

Ok, this is Blog post attempt Take 2 - UGH!!
Had an entire post written and poof...Firefox froze up and ate my post.
I am SO not happy right now.

I WAS talking about adjusting to the new training schedule. I like it, but I would like to run more so I may adjust it just a bit. Today was a rest day and I did about 45 minutes of cardio. I am not good at doing nothing! 

We'll see, when I get done pouting about the blog post and then have some awesome soup, I may take a look at it.

Before Christmas, the wonderful folks at NuNaturals contacted me and asked if I would try out some of their products. I love my stevia and I am an actual baker, so I am all in for the NuStevia!
Over the past few weeks, I have been using the different flavored NuStevia liquids in my muffins. I have also been adding them to my daily decaf (that I love!)
Love the convenient packets!
Today I used this to compliment my carrot cake muffin!
It even smells amazing!
This isn't the first time I've made a carrot cake muffin, but I did a few tweaks here and there and I really wanted to use this Orange NuStevia. Here's a little peek at your blog bonus (haha!)...
Out of the oven and smells fantastic!


Carrot Cake Muffin
3 Tbs. Liquid Egg White
1/4 cup Good Karma Unsweetened Flax Milk
1 tsp. Vanilla
10 drops NuNaturals Pure Liquid Orange NuStevia
1 packet NuNaturals NuStevia White Stevia Powder
1/2 tsp. Cinnamon
7g. Nectar Sweets Vanilla Bean Torte Protein Powder
2 Tbs. Bob's Red Mill Coconut Flour
1 tsp. Ground Flax Seed
1 oz. Shredded Carrots
1/2 tsp. Baking Powder
1/8 tsp. Baking Soda
Optional: Additional Stevia & Cinnamon

  
 Preheat oven to 350*
Prepare individual muffin tin or baking dish.
Combine the 'wet' ingredients and mix well. 
Stir in the dry ingredients and add the carrots. 
Pour into prepared baking dish or tin.
Optional: Dust top of batter with additional stevia & cinnamon.
Bake for 30-35 minutes.
The orange stevia was a great addition!

  1. This isn't a comment to the post, but saw the recipe and thought you might be interested. Although not perfect as is, thought it had potential as a famous Michelle redo.

    Protein Cinnamon Rolls

    •5 egg whites
    •10g coconut flour
    •Vanilla Whey protein (30g)
    •10g Apple Fiber (pectin)
    •1 packet stevia
    •1 tbsp Cinnamon




    Combine the ingredients. Spray a rectangular pan with olive oil spray and then lay out the dough out in a rectangular pan in one long rectangle. Pre-heat the oven to 350 degrees. Bake the dough for 15 minutes or until golden brown.

    While the dough is baking combine the following ingredients for the frosting:
    2 egg whites
    1/4 cup Non-fat Greek Yogurt
    1 packet stevia
    1 tbsp Cinnamon
    1 tbsp Vanilla Extract

    Whip the egg whites and then fold the Greek yogurt in. Add the additional ingredients. Once the dough is baked roll it up, cut it into bite-sized pieces and spread the frosting on top.
