It's a Blog BOGO!!

HaHa!
Yep, it is a BOGO kind of day. Sort of.
You didn't have to buy anything, but the title sounded kind of cool to me.
Admitting that makes me uncool, doesn't it?
Ah, oh well. I will be uncool then.

So yeah, this is me this morning...
The run did not happen and I was forced to workout indoors.
I stepped outside and about busted my booty!
The temp is dropping and turning everything into something like a thinly glazed donut.
Yikes!
It was super slippery on the road surface. In I came, and banged out 45 minutes of cardio.
There is always a Plan B.

But THIS happened...
Followed by this...
That's right, it was a muffin morning!

And because you have been so sweet to actually read BOTH posts from today, I am going to share the recipe. HaHa!

Chocolate Chip Cookie
Microwave Magic Muffin
3 Tbs. 100% Liquid Egg Whites
1 Tbs. Unsweetened Applesauce
1 Tbs. Vanilla
1/2 tsp Butter Flavoring
Dash of Cinnamon
Stevia, to taste
2 Tbs. Bob's Red Mill Low Carb Baking Mix
2 Tbs. Bob's Red Mill Coconut Flour
1/2 tsp. Baking Powder
1/8 tsp. Baking Soda
7 g Unsweetened Chocolate, chopped
Water

 Combine all of the ingredients (*except for the chocolate) in a microwave safe container. (I use a 2-cup Pyrex measuring cup) Add enough water (or liquid of your choice), to create a batter consistency. Stir in chopped chocolate.
Microwave on full power for approximately 2:00 - 2:30 minutes. Microwave times may vary.
The muffin continues to cook and set once you take it out of the microwave, so you do not want it fully 'baked' when you remove it. If the very edges are set, and the center seems soft...it is perfect! By the time you let it cool a minute and turn it out, it will be perfect!

  1. I just made your chocolate chip cookies, WOW, they are great. ( I will pass them on to my running buddies ) I will not run when the streets or sidewalks are icy. Past experience had been injuries.--pulled hammie's and too many falls. Running is the snow is actually sorta fun. Cold temps, well, we can still run.

    1. Awww...so glad you liked them! My training starts today and the next three days are scheduled run days and wouldn't you know it...Snow is headed our way by tomorrow afternoon. The temps 'could' be warm enough that it will just be rain...we'll see!

  3. Love seeing all of your muffin creations on instagram, going to make a couple types of mini muffins using your recipes tonight! Fortunately I have nearly all the ingredients too! I don't have coconut flour, but I do have bean flour, rice flour and Bob's redmill gluten free flour which work great for other concoctions I make. Just wanted to stop by, say hi and that I love your recipes! Hopefully mine turn out as good as yours look!
