The title is kind of like the highlights of my day. (Seriously, I am terrible at the post title thing.)
My son is on mid-winter break (what the heck is that for anyway?)
So this morning was about getting him to his Dad's so they could catch a flight.
It definitely threw the morning off, but we rolled with it.
I have been talking about Trader Joe's for how many days now?

I am sure the folks at Trader Joe's were impressed with my real clothes and make-up.
I am not sure the lady that was telling everyone how bad coconut oil is really noticed though...
Some folks were pretty darn lucky to have an authority on EVERYTHING shopping at the same time as them. I didn't feel so lucky to somehow keep ending up within ear shot of her. Her knowledge of nutrition might not have been 100% correct. I am no authority, but some tid bits seemed a 'little' off.
Well, I totally scored in the produce department. I love the price per piece concept.
Man, don't you wish every store did that?!
I also got some really pretty flowers. I love fresh flowers~They make me smile!
I am reading a book by Matt Fitzgerald, "The New Rules of Marathon and Half-Marathon Nutrition".
I am loving it and all of the information. Some of it is new to me and some of it is healthy eating basics.
I am definitely enjoying learning about nutrition. Specifically sports nutrition.
There is so much information out there that I think it is overwhelming for many people.
I am looking into going back to school to be a Health Education Specialist.
My own struggles with eating disorders and now what I am learning through an entire lifestyle change are things I would like to share with other people. I don't know...
Maybe I have finally figured out what I want to be when I grow up!
Oh, so the rest of my day...

I went to the Better Health Market in search of kamut flour (they didn't have any...sad!)
But I found these bad boys, which were also on my list.

Wow! That's all I've got to say.
Bitter like baking cocoa (I don't 'do' sugar), crunchy like nuts (I am allergic to nuts), and somehow addicting.
They are smashed and roasted bits of cacao beans.
If they went on in the processing, they would have sugars and other stuff added to them and made into chocolate bars. This is their last hoorah in their natural state.
They starred in my amazing 'dinner'!
Better Health had kabocha squash! And it was only $.90!
I may have bought one or two four of them and am considering going back tomorrow for more.
Those things are hard to find!
But, yeah...this was dinner.
An entire roasted kabocha (skin and all, are you supposed to eat the skin?!) and some protein cookie dough with the cacao nibs. Oh my gosh...so good!
I was so hungry. I had a big old salad when I got home from shopping and then I sat down to do some reading. The reading never happened, but a 2+ hour nap did. Holy cow! That never happens to me.
I already had missed breakfast when my schedule was thrown off and I hadn't worked out yet.
Yikes!
Woke myself up from the nap, got the squash roasting and made the cookie dough.
Threw in one of my classic favorite DVD's and got in my cardio for today.
Even rocked a new tank from Target. It was so comfy and supportive, too.
Sometimes those cute workout tops don't do their job, you know?
It was an all black workout night. Yes, I color coordinate even when I am home alone.
Have to be cute! haha!
Dinner was yummy. I will give you the cookie dough recipe tomorrow. I think I want to try it one more time before I share. I am hoping to read a bit tonight.
Hmmm...wonder if that will happen?!





Those nibs look really good. I will have to look for them this weekend for a treat.

I'm obsessed with Kabocha!! I bought a ton yesterday!!! So amazing and my whole family enjoys its!
