A very Happy Halloween my friends!
It has been a ridiculous week and so you haven't seen much of me.
My workouts have been rough & rugged and I would rather be running!
The end of October means that lawn furniture has to be moved and leaves have to be raked and a whole lot of other fun winterizing has to be done.
This is what I look like when I am about to chainsaw some stuff!
It's my tough girl look. Haha...in my Tigger hat, so tough!
But note the safety glasses. I had a near mishap last time I cut some stuff down and so it is safety first for this girl!
The day after chainsawing requires burning stuff. This is by far my least favorite thing to do. I hate the smell of burning leaves...Gak!!!
But here you will see my fancy bandana. Why you ask?
Last time I burned stuff, an ember flew into my hair and burned it.
Umm, I am not a fan of burning hair either so I went with this awesome get-up in order to avoid that little situation.
Over the last 3 days I have spent somewhere around 8-10 hours outside moving, hauling, raking, burning, picking up, bending down, stinking like Smokey the Bear and I am over it, folks.
I am happy to say that it is raining out and so there will be NO outdoor activities today.
Oh hey, I know I am all about health and fitness, but my teenager is not.
He'd rather starve to death than eat "my" food.
One of his favorite things is my homemade caramel corn.
Caramel corn is a family tradition and yes, I think mine is better than my Mom's.
I found and perfected a microwave version and Ian loved it!
Traditional caramel corn takes a while to do it right, so this quick version is perfect!
There isn't a single thing healthy about this. Oh wait, the coconut oil!
Microwave Caramel Corn
3 qt. Popped corn (about ½ cup unpopped)
3 Tbs. Coconut oil
3 Tbs. Butter
3 Tbs. Corn syrup
3/4 cup Brown sugar
1 tsp. Salt
Set popcorn aside in microwave safe bowl.
Stir together remaining ingredients in large microwave safe bowl. Microwave for 2 minutes, stir and microwave another 2 minutes.
Stir in 1 tsp. Vanilla and 1 tsp. Baking soda; it will foam.
Pour over popped corn, stir to coat. Microwave for 45 seconds; stir and microwave for another 45 seconds. Stir and pour out onto waxed paper. Break up clumps and allow to cool to harden.
Ok, I am looking at this recipe and am pretty sure I can do a cleaned up version of it.
I am making caramel corn today!!

Ok, I am really just going to catch up on blog and computer stuff but it sounds a heck of a lot better than raking anything.
